Pulled Pork #1


 meat:
1 boneless pork butt, about 4 pounds
1 1/2 tablespoons dark brown sugar
1 tablespoon paprika
1 tablespoon salt
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon red pepper flakes
1/2 tablespoon dried oregano
1/2 tablespoon dried marjoram
~marinate  overnight, in the refrigerator.
~bring the meat to room temperature.
~bake in a dutch oven (covered) for 6-7 hours at 225 degrees, or until fork tender.
~shred meat with forks, removing any fat.
~return to pan and add enough sauce to make it really saucey. the meat will absorb some of it so if you do not use enough it will be dry.


sauce:
1/2c apple cider vinegar
2c ketchup
1/3c packed brown sugar
2 T mustard
2 T molassas
2 t salt
~mix well to combine.

slaw:
1/2 head of green cabbage, shredded
1 carrot, shredded
1/3 c minced onion
1/4 c parsley, finely chopped

3/4 c mayo
3T dijon
2T sugar
2T apple cider vinegar
2T buttermilk
1 t salt
1/4 t pepper

~mix all together and let stand about 1 hour. mix a few times to coat and again before serving.
~build sammies with all of the above and your favorite rolls.
