Blueberry Muffins
1c rolled oats
3/4c brown sugar
1c buttermilk
1 egg
~mix and soak 5" (or overnight).
1c flour
1t baking powder
3/4t salt
1/2t baking soda
1/3c shortening
~add to the above mixture.
1c (generous) blueberries
~fold into the batter.
~spoon into lined muffin tin.
~bake at 400 for 18" EXACTLY.
Mimi's recipe
makes 12 -14
Options:
~add the zest and juice of 1 lemon to the batter.
~substitute blackberries or raspberries for the blueberries.
~omit blueberries; add a large handful of craisins and the zest and juice of 1 orange.

Cranberry Bread
2c flour
1c sugar
1 1/2t baking powder
1t salt
1/2t baking soda
1/4c butter
1 egg
1t orange zest
3/4c orange juice
1c golden raisins
1 1/2 c fresh cranberries, chopped
1/2c powdered sugar
~sift the first 5 ingredients.
~cut in the butter until mixture is crumbly.
~add egg, zest and juice. stir to moisten.
~fold in raisins and cranberries.
~pour into a loaf pan and bake at 350 for 1hr 10 min.
~cool 15" before removing from pan.
~make a simple glaze with the powdered sugar plus a LITTLE water.
~glaze immediately after removing from pan.

Gluten Free Monsters
1 stick of softened butter
1 cup sugar
1 1/4 cup brown sugar
1—16 oz can creamy peanut butter
3 eggs
4 1/2 cups oats
2 t baking powder
1 cup M & M’s
1 cup chocolate chips
1 t vanilla pinch of salt
~cream butter and sugar.
~add the pb, eggs and vanilla. mix well
~add the remaining and mix well.
~drop medium sized spoonful onto a cookie sheet and bake at 350 for 11-13''
~cool partially before transfering.
~invite becca over and enjoy!

Mimi's Favorite Granola
1 1/4 c shaved, unsweetened coconut
3/4 c butter
1/2 c honey
1/4 c brown sugar
1 t salt
1 t vanilla
6 c oats
1 1/4 c sliced almonds
1/4 c sesame seeds
~toast the coconut in a dry skillet until golden, set aside. (watch this closely 'cause it will go from toasted to burned very quickly!!)
~melt the butter in a sauce pan
~add the honey, sugar and vanilla and mix well
~add the oats almonds and sesame seeds, mix well
~spread the mixture onto 3-4 cookie sheets
~pop into the oven at 350 for about 45" (or until golden) stir every 15"
~cool completely
~store in a big, beautiful glass jar

Fruit Soup
1/3 c suagr
2 1/2 T quick cooking tapioca
2 c water
4 oz frozen oj concentrate
10 oz frozen berries (or fresh if in season)
2 c frozen peaches (or fresh if in season)
1 can mandarin oranges
2 medium bananas
~in a sauce pan combine suagr, tapioac and water.
~cook over medium heat, 5 minutes or until thickened and clear.
~stir in oj concentrate and frozen fruit.
~continue to heat heat just until warm.
~remove from heat.
~stir in bananas.
~serve immediately.
serves 4-6

~bake at 350 for 30"

Hashbrown Cassarole
2# potatoes-washed and shredded
1/2 c melted butter
1 can cream of chicken soup
12 oz grated cheese
8 oz sour cream
1/2 c onion- chopped
2 c corn flakes- crushed
1/2 c melted butter
~spread the potatoes in a 9 x 13 pan
~mix the next 5 ingredients together (i usually omit the butter in this part)
~spread the mixture over the potatoes
~sprinkle the cornflakes over the top
~drizzle the butter over all of that
~bake uncovered for 50-60" at 350
serves: a family with leftovers.
