Cherry Bounce


1/3 c suagr
2 c pitted cherries
3 c bourbon (or brandy)
optional: zest of up to 1 lemon

~pour the sugar into a clean quart jar.
~add enough cherries to fill the jar (do not press down).
~fill the jar with bourbon (making sure cherries are completely covered).
~put a lid on the jar and place it in jthe back of the refrigerator and let set for 2-3 months.
~shake the jar once a week.
~strain and bottle as desired.
~serve as a cordial or use to flavor lemonade or iced tea.
~serve the cherries in cocktails, lemonade, over ice cream or use to make a cobbler.

Note: a cherry cordial made in mid-summer will be perfect for thanksgiving and/or christmas.
