Pumpkin Pie
1 qt home canned pumpkin
4 eggs
1 1/2c sugar
1t salt
1 1/2t cinnamon
3/4t nutmeg
2 1/2c milk
2 9" pie crusts
~whirl first 7 ingredients in a food processor until smooth.
~pour into the pie crusts.
~bake for 1 hour at 350".
Notes: bake on cookie sheets in case of spills. cover crusts if the are getting too dark.

Cranberry Bliss Bars
cake:
2 sticks butter, softened
1 1/4c brown sugar
3 eggs
1t ground ginger
1t vanilla
1/4t salt
1 1/2c flour
1/4c dried cranberries, minced
1/4c white chocolate chips
1/4c candied ginger, minced
zest of 1 orange
frosting:
4 oz cream cheese
1 1/2c powdered sugar
2T butter
1t vanilla
garnish:
2T dried cranberries, minced
2T candied ginger, minced
1/3c white chocolate, melted
~beat butter and sugar.
~add eggs and vanilla and beat until fluffy.
~add flour, salt, ginger and orange zest. mix to combine.
~fold in the berries, candied ginger and chocolate.
~spread batter (will be thick) into a jelly roll pan and bake at 350 for 20-25", or until lightly golden.
~cool.
~mix all ingredients for frosting together.
~spread onto the cooled cake and top with berries and ginger.
~drizzle the melted chocolate over all of it and allow to cool.
serves 12-16

Gluten Free Monsters
1 stick of softened butter
1 cup sugar
1 1/4 cup brown sugar
1—16 oz can creamy peanut butter
3 eggs
4 1/2 cups oats
2 t baking powder
1 cup M & M’s
1 cup chocolate chips
1 t vanilla pinch of salt
~cream butter and sugar.
~add the pb, eggs and vanilla. mix well
~add the remaining and mix well.
~drop medium sized spoonful onto a cookie sheet and bake at 350 for 11-13''
~cool partially before transfering.
~invite becca over and enjoy!

Cookie Dough Cheesecake
crust:
1 3/4c chocolate chip cookie crumbs
1/4c suagr
1/3c melted butter
~crush the cookies
~add butter and sugar. mix well.
~press into the bottom of a 9" spring form pan.
cookie dough:
1/4c butter
1/4c sugar
1/4c brown sugar
1T water
1t vanilla
1/2c flour
1 1/2c mini chocolate chips
~cream butter and sugar
~mix in the remaining ingredients
~roll into small balls (small grape sized)
~place dough balls on top of the crust
filling:
(3) 8 oz packages cream cheese, softened
1c sugar
3 eggs
1c sour cream
1t vanilla
~cream the cream cheese and sugar
~mix in remaining ingredients
~pour over crust/dough balls
~bake 350 for 45-55"
~garnish with chocolate chips
serves 8-12

Lemon Blackberry Crumble Ice Cream
Oh Yum!
crumble:
1/4 c flour
1 t grated lemon zest
1/4 c sugar
2 T butter
~preheat oven to 350.
~mix the flour, zest and sugar.
~cut the butter into the flour mixture (use your hands) until you have large crumbs.
~sprinkle the crumbs in a baking dish.
~bake 7 - 10", or until the crumbs start to brown.
~set aside to cool.
ice cream:
4 c blackberries
1 c sugar
1 T lemon juice
2 c heavy cream
~mix the berries, lemon juice and sugar.
~let stand at room temp to macerate (you want it good and juicy).
~mash berries with a potato masher.
~stir in cream.
~stir in the crumbles (break these up into smaller pieces as you add them in).
~pour into an ice cream freezer and churn.
~call your mimi and invite her over to enjoy it w/ you!!
