Chile Verde

3# beef- cut into lg chunks
1/4 c flour
1/3 c oil
1 lg onion- chopped
6 lg anaheims
1 jalapeno
1 bunch cilantro
18 med tomatillos and 1 c water (of 1 qt undrained tomatillos)
2 T tequila
1 t oregano
1 t cumin
2 t salt

~dredge the beef through the flour
~heat oil in a dutch oven
~add meat in small batches and brown
~add everything else to the pot and simmer on low till it all starts to fall apart
~fork shred the beef, if needed
~you may also need to add a little more water, so keep an eye on it
~serve w/ warm tortillas
