The Best Enchiladas!

1# ground beef
1 med onion
4 cloves garlic
1/3 c butter
1/2 c flour
1 qt tomatoes
2 c beef broth (or 1 can)
1-1/2 t chili powder
1-1/2 t cumin
1 t sage
1/2 t salt
6 flour tortillas
2 c shredded cheese

~brown the beef with the onions and garlic (drain of all fat when finished)
~meanwhile, puree the tomatoes
~melt the butter in a med sauce pan
~add the flour and mix together
~pour in the pureed tomatoes and the broth
~whisk till smooth
~add the spices
~cook on med heat until it thickens up (you know what enchilada sauce looks like)
~add enough sauce to cover the bottom of a 9 x 13 baker
~spoon the meat into the tortillas
~roll them up and place seam side down in the baker
~cover with the remaining sauce
~top w/ the cheese
~cover and bake at 350 for 30"
~uncover and bake 10" more

Note: if you are inviting your dad over for dinner, you better double this!!
