1 c brown rice
2 c chicken broth (or 2 c water and 2t bullion)
1 T olive oil
1/8 t salt
1 lime (zest and juice)
1/4 c cilantro chopped
~ put all of the ingredients, except the cilantro, in a med sized pot.
~bring to a boil, then turn down to a simmer.
~cook until the liquid has been absorbed and the rice is soft (add more water if necessary).
~let stand 5" with the lid in place.
~ toss in cilantro and fluff it all with a fork.
