1 anaheim chile, roasted, seeded and peeled
1 bunch cilantro
1/4 c pepitas
1 clove garlic
3/4 c mayo (or mayo/yogurt combo)
1/3 c oilve oil
2 T red wine vinegar
2 T parmesan cheese
1/4 c water
1/2 t salt
pinch black pepper
~whirl all in a food processor until smooth.
makes about 2 cups.
