Mimi's Go-To Quiche
1 chub jimmy dean, low fat, sage sausage
1 c cheese
1 c milk
2 med anaheim chiles (or 1 sm can of chopped green chiles)
~soak the tortilla in the milk while you cook the sausage. (yummiest way)
~or not, you can also just warm it up on a burner. (quick and easy)
~cook the sausage.
~roast and peel the chiles, or chop/seed and saute in a little olive oil (slightly soften)
~line a 9" pie pan with the tortilla.
~spoon in the sausage.
~sprinkle the cheese over the sausage.
~whisk the eggs and milk together. (the same milk you used to soak the tortilla)
~Stir in the chiles.
~pour over the sausage/cheese.
~bake at 350 until it is set (about 45-55")
